How to Prepare Chicken Suya
Steps in making Chicken suya
i. Mix the suya spice, vegetable oil and salt to taste in a small bowl and set aside.
ii. Soak the bamboo skewers in water for about 20 minutes. This is to prevent it from burning in the oven once you start grilling.
iii. Chop the chicken into small bite sizes with a knife and thread about 4-5 pieces on each bamboo skewer. Ensure that you cover the skewer with chicken slices.
iv. Place the threaded skewers on an aluminum foil and lightly brush over the spice mixture on both sides. Cover the threaded skewers with foil paper and leave to marinate for about 20 mins. While it marinates, pre-heat the grill to 450°F.
v. Place the skewers on the grilling rack and grill for about 10 minutes on each side until the chicken is fully cooked.
vii. Sprinkle with extra suya spice and garnish with chopped onion, tomato, and cucumber. Serve hot.
